Recipe for Dietary Chicken Soup with Rice and Vegetables


chicken - 1 bird
water - 3 liters
potatoes - 3 pcs.
carrots - 1 pc.
onions - 1 pc.
rice (steamed) - 100 gr.
salt, pepper - to taste

Cooking method:

Take the chicken and carcass. Place the chicken pieces in a saucepan with cold water and set aside for heating. When the water boils, remove the foam formed, salt to taste. Reduce heat and cook chicken for 1 hour. If the chicken is homemade, then cook for 1.5-2 hours.

Remove the finished chicken from the pan, cool it and remove the flesh from the bones. Meat can be cut into cubes, and you can randomly pick pieces. Postponing.

If there is a desire, then at this stage you can strain the chicken broth through a sieve and boil again.

We clean carrots and onions. Cut into small slices, rings or half rings. Add to the broth.

We clean the potatoes, cut into cubes and send to the broth. Cook for 15-20 minutes.

Pre-washed rice is placed in broth. Cook for 10-12 minutes.

Send the chicken fillet to the pan and bring the soup to a boil.

A couple of minutes before turning off the heat, add some fresh parsley.

Dietary chicken soup with rice and vegetables is ready. When serving, you can also sprinkle with fresh parsley.
