Tuscan Bean Soup

onion - 1 pc
leek - 2 stalks
potatoes - 2 pieces
garlic - 2 cloves
olive oil - 3 table. spoons
vegetable broth - 1/2 l
canned white beans - 400 g
Savoy cabbage - 150 g
parsley - chopped, 3 table. spoons
Oregano leaves - chopped, 2 table. spoons
Parmesan cheese - 70 g
ground black pepper - pinch
salt - pinch
Cooking method:
Chop the onion and leek.

Cut potatoes into cubes.

Finely chop the garlic.

Transfer the vegetables to a frying pan heated with oil and fry, stirring for 4-5 minutes.

Separate the beans from the pot.

Mix the beans and broth with the roasted vegetables.

Cook soup over low heat for 15 minutes.

Add beans, chopped cabbage, half greens, salt, pepper and cook for another 10 minutes.

Beat a third of the soup until smooth.

Pour the whipped mass into a saucepan with the soup and warm up for 5 minutes.

When serving, pour the Tuscan bean soup into plates, sprinkle with the remaining greens, grated cheese and onion rings.
