Broccoli Cheddar Brown Rice Skillet Recipe | SELF
This meatless dinner is just decadent enough, thanks to a little bit of cheese.

Makes 2 servings

Ingredients:
2 teaspoons canola oil, divided
1/2 small yellow onion, minced
2 cloves garlic, minced
Salt
Pepper
1 1/2 cups broccoli florets
1 cup cooked brown rice
2 tablespoons plain 2-percent-fat Greek yogurt
2 tablespoons nutritional yeast flakes
1/4 teaspoon paprika
1 pinch curry powder
1 ounce cheddar, grated
Red pepper flakes (optional)

Directions:
Heat oven to 400°.
In a medium oven-safe (preferably cast iron) skillet over medium heat, heat 1 tsp oil. Add onion and cook, stirring occasionally, until it starts to soften, about 2 minutes. Add garlic, salt, and pepper, and cook just until garlic is fragrant, about 1 minute more.

Add broccoli and 1 tbsp water and reduce heat to medium low. Cook, stirring, until broccoli is bright green but still very crunchy, about 2 minutes. Add rice and cook, stirring, until just heated through. Remove from heat.

In a bowl, stir together yogurt, yeast, paprika, curry powder, and remaining 1 tsp oil. Pour over broccoli-rice mixture and toss to combine. Spread into an even layer and top with cheese.
Bake until heated through and cheese starts to brown, about 15 minutes.

Cool slightly before serving. Garnish with red pepper flakes, plus more black pepper, if desired.
