Salt the red fish.

Prepare a mixture of 1 tablespoon of salt (large) and 1 tablespoon of sugar.

Fresh-frozen fish (necessarily frozen, because in this form it is easily separated from the bones) to clear from the skin. It can be easily removed.

Separate the meat from the bones. Cut the plates with a width of about 1 cm.

If you do not want to bother, you can just buy the fillet.
In a glass or enameled container we lay out the fish, sprinkle it (lightly, otherwise the fish will be too salty) with a mixture of salt and sugar, then again fish, salt again, etc. A mixture of salt and sugar is not used.

All this watered with vegetable oil (2 tablespoons)
That's all. We put it away in the refrigerator. In the morning it can already be eaten.
